Brisket and mushroom melt

This brisket and mushroom melt is a delicious lunch or dinner that the whole family will love.

Serves: 2

Ingredients

  • 200g brisket (purchase brisket on our website)

  • 25g butter

  • 8 button mushrooms - thinly sliced

  • 3 cloves of garlic - finely chopped

  • A couple of handfuls of rocket

  • 2 slices of bread - we used sourdough!

  • 2 slices of swiss cheese

  • Wilson Barbecue BBQ sauce (shop here)

  • S & P to season

Method

  1. Preheat your oven to 180 c - grill.

  2. If you’re using our brisket, the first step is to bring a pot of water to the boil to drop your bag of brisket in. Once the water is boiling, follow the heating instructions included with your order.

  3. Toast your bread.

  4. While the bread is toasting melt the butter in a frying pan. Once melted cook the mushrooms and garlic together to create delicious garlic butter mushrooms. Season with salt and pepper.

  5. Once the brisket is heated, bread toasted and mushrooms cooked it’s time to assemble. Start with your slice of bread, top with rocket, mushrooms, brisket and swiss cheese. Place under the grill until the cheese melts - it won’t take long so keep an eye on it!

  6. Once the cheese is melted top with bbq sauce (some aioli would also be delicious with this!), and season with more salt and pepper. YUM!
